The jazzo is a traditional dry-stone construction that used to keep shepherds and their flocks safe from wolf attacks during the night, preventing the predators from climbing into the pens by means of cantilevered stones known as pietre dei lupi or paralupi. A jazzo that has remained intact to this today continues to keep watch over the vines from which we have selected Pietra dei Lupi, obtained thanks to the separate vinification of Troia grapes.
